Fairmont Hotels & Resorts has opened Fairmont Cheshire, The Mere – a luxury countryside resort in northwest England.

Marking the brand’s fourth property in the UK, the new hotel is nestled within 157 acres of picturesque Cheshire countryside, with views over The Mere lake.

Offering a range of accommodations and activities, guests can check into 116 rooms, including 23 suites, dine at Gordon Ramsay at The Mere restaurant, or book a wellness treatment at the Fairmont Spa.

Between all the relaxing and dining, visitors can also play 18 holes on a championship-level golf course.

Located just outside of the market town of Knutsford, the property is just 30 minutes by road from Manchester while the Peak District can be reached in under an hour.

Wellness and golf

At the Fairmont Spa, which is set within a restored Victorian stable block, guests can relax in the 20-metre swimming pool, a Finnish barrel sauna, ice baths, hammam steam rooms and salt inhalation chambers. There are also 20 treatments available to book, a Technogym with weights area for training, and a covered outdoor class studio.

For golfers, the resort’s championship parkland golf course is surrounded by stunning Cheshire countryside and framed by neat fairways and The Mere lake. Originally designed in the 1930s by James Braid and George Duncan, the 18-hole course offers a challenge for all handicaps.

Dining at Gordon Ramsay at The Mere

One of the big highlights is the opening of Gordon Ramsay at The Mere, the resort’s main dining destination which has a British-inspired menu featuring the chef’s signature beef wellington.

Guests can choose to be seated in the venue’s private dining room, the main restaurant, or the outside terrace overlooking the lake. There’s also a speakeasy-style bar serving premium drinks and cocktails.

Other dining destinations include The Orangery, where guests can enjoy a British afternoon tea during the day, before it transforms into a champagne and oyster bar in the evening. At The Club Lounge, the menu blends globally inspired dishes alongside a selection of Indian-influenced cuisine.

Before its £125 million (€146.7 million) developer-led transformation into the five-star Fairmont resort, the property was known as The Mere Golf Resort & Spa.

Fairmont Cheshire, The Mere is the luxury brand’s fourth hotel in the UK, joining the portfolio alongside The Savoy, A Fairmont Hotel; Fairmont Windsor Park; and Fairmont St Andrews.
